Coco Tapioca

Ingredients (Makes 6 Servings)

1/3 cup small or large pearl tapioca, soaked overnight 

3 cups homemade coconut milk

2 beaten eggs (or equivalent amount of vegan egg product)*

1/3 to 1/2 cup regular or coconut sugar, or other sweetener of choice

1/2 tsp sea salt

1 tsp vanilla

Mix all ingredients (except vanilla) and cook on medium heat stirring constantly until it comes to a full boil

Remove from heat, cool 20 minutes and stir in vanilla

Serve warm or refrigerate to serve chilled


*(For vegan recipe, replace with vegan egg product and modify steps using instructions for vegan egg product)
